Parabola
Russian Imperial Stout - 12,7% alc
Parabola is a beer of darkness and immensity, a barrel-­aged beast that is routinely ranked as one of the top beers in the world. This Russian imperial oatmeal stout is aged for a full year in Heaven Hill barrels, developing flavors of rich, chewy roasted malts, charred oak and bourbony vanilla. Parabola bares its teeth with its impenetrable black hue and soaring alcohol, yet its bite remains refined with a silky, balanced finish.

Stickee Monkee
Barrel-Aged Central Coast Quad - 11,4% alc
Brewed with Belgian candi sugar and aged in a selection of fine bourbon barrels, Stickee Monkee trailblazes its own category as a “Central Coast Quad.” The name Stickee Monkee is a nod to the Central Coast’s native Sticky Monkey flower, as well as a shout­‐out to the Belgian monks who pioneered the Quad style.
It has been said that the only constant is change and the same is true for barrel-aged beers. Cut from a similar recipe, this barrel-aged Quad evolves and shows a different face each year; a result of time spent aging in the barrel. Turbinado brown sugar from Mexico adds wonderful molasses flavors that are reminiscent of Belgian candi sugar. It has a full body and lush texture with barrel expression all over; toasted oak, coconut, leather and rich cigar tobacco.

Helldorado
Blonde Barley Wine - 12,8% alc
Part of the adventure of aging beer in retired spirits barrels is the synergistic interaction of different malt flavors with the oak and spirit flavors from the barrel. Darker beers like stouts and darker barley wines have typically been the favored candidates for barrel-aging, due to their deeper caramel and roasted flavors. Helldorado breaks that mold with a deep golden color from being brewed solely with English and American pale malts. The bready, honeyed flavors of pale malts pull out rich wildflower honey, vanilla and coconut notes from the oak, creating an overall flavor evocative of bourbon-glazed graham crackers that stands as singularly unique in our Vintage lineup. Helldorado may be lighter in color but it is a full-bodied and densely concentrated sipper at 12.8% ABV.

Velvet Merkin
Bourbon Barrel-aged Oatmeal Stout - 8,5% alc
Velvet Merkin is the beer that almost wasn’t…Indeed, this vintage oatmeal stout’s comical (or is it scandalous?) name went off the grid for several years, but now it’s back due to popular demand. Velvet Merkin is aged for a full year in retired spirits barrels from Heaven Hill, Woodford Reserve and others, yet manages to offer mind-­boggling balance and restraint. You will wig out when you taste Velvet Merkin’s rich milk chocolate, bourbon and espresso flavors, preceded by aromas of vanilla, coconut, toasted oak and mocha.

Since founding our brewery in 1996, we have specialized in the rare art of brewing beer in oak barrels. In the fall of 2006, we released a limited edition oak-aged strong ale called 10 to commemorate our 10th anniversary. The experience was greater than any one of us could have ever imagined. We now present XXI, our 12th release in what has become an annual Anniversary Ale. At 21 years old, our brewery is finally drinking age!

Bravo
Imperial Brown Ale - 13,2% alc
We proudly present the 2017 Vintage of Bravo, our Imperial Brown Ale aged in retired American oak bourbon barrels. Although Bravo was the first strong ale brewed for our Anniversary Ale blending program over ten years ago, it has yet to see its own bottled release, until now. Balancing rich toasty and chocolate malt flavors with a gentle balance of noble hops, Bravo is brewed to showcase barrel flavors with massive bourbon barrel notes that morph as the beer warms in the glass.
